In the West African country, it’s the third-largest source of dietary iron after red meat and green vegetables. For those who are still wondering, Fufu is a Nigerian word for ‘starch’.
Don’t be fooled by the name. This dish is not made from corn, but rather from the dumpling-like starchy material known as cassava. The cassava root is peeled and shredded to give it a porridge-like consistency. Fufu is also accompanied by a stew called yam or cocoyam.
