The Olu Olu poundo yam is a type of food made from yams. Yam flesh can be white, yellow, pink or purple and the taste ranges from sweet to bitter or it can even be tasteless. The skin is quite thick resembling three bark. For a poundo yam in Nigeria, the skin is peeled off and the flesh is roasted with palm oil, onion and pepper until it becomes soft and sticky. A variety of ingredients are added during the process of roasting such as salt, garri (processed cassava flour), stock cubes, bouillon cube, dried fish or meat. A poundo yam is often eaten with fried plantains (banana) or boiled cassava leaves as a meal for lunch or dinner
